Orange Cranberry Scones
I absolutely love scones. I don't care if it's blueberry or strawberry. I found an incredible recipe for scones in a HI VEE's Grocery store. I had never been to one in my life and loved it immediately. It is a great store. The buffet is really a great place to eat.
I love their display of veggies in the produce area. If you have never been its worth going. On the way out there is a free HYVEE magazine filled with great ideas and recipes. That is where I found this amazing recipe.Enjoy!
2 3/4 c all purpose flour
1/2 c plus 3 TBS granulated sugar,divided
1 TBS baking powder
1/2 tsp salt
6 TBS unsalted butter, cut into bits
2 TBS grated orange zest
2 TBS freshly squeezed orange juice
1 tsp minced fresh ginger
2 c cranberries
1 large egg
1 large egg yolk
1/2 c heavy whipping cream
400 degree oven in a baking sheet with parchment paper
In a food processor, pulse flour,sugar,baking powder,salt, butter,zest,orange juice, and ginger until its like coarse meal. Toss all into a large bowl.In a separate bowl toss together cranberries and 2 TBS sugar then mix into flour mix.In a separate bowl mix eggs and cream lightly together. Then toss all together. Pour mixture out onto a floured surface.Pat dough into a 9 inch square. Take a floured knife cut into desired shapes. Arrange onto baking sheet with parchment paper 1 inch apart.Sprinkle with large granulated sugar and bake 25 to 30 min until lightly golden.
